Eggplant Pizza: Date Added: 25 Apr 2013

- 1 lb. eggplant, ends trimmed, cut crosswise in 1/2-inch thick slices
- 6 Tbsp. olive oil
- 1/2 cup Pasta Sauce
- 3/4 cup shredded mozzarella cheese

Cooking Instructions

1.Preheat oven to 425°. Brush both sides of eggplant slices with olive oil. Arrange on baking sheet.
2.Bake, turning once, until eggplant is tender, about 16 minutes. Remove from oven, then top with Pasta Sauce and cheese.
3.Bake until cheese is melted, about 8 minutes
